In central Portugal, between Coimbra and Aveiro, the two great hubs of the area, and with the Atlantic right there. A benchmark of Portuguese winemaking, with clay-limestone soils that give the wines a character all their own, and where every kind is made: sparkling, whites and reds.
It makes about 60% of all the country’s traditional-method sparkling wine, the same technique as Champagne: once bottled, the wine ferments a second time inside the bottle itself, over months. That is where the fine, persistent bubbles come from, along with that aroma of freshly baked bread. A labour of patience, felt in every glass.
Made mostly from the region’s white grapes, Bical, Maria Gomes (also called Fernão Pires), Cercial and Arinto. Fresh, elegant and full of life.
The Bairrada’s flagship grape. It ripens late and has high acidity, which makes it demanding, but that is exactly what gives intense, structured reds that can last for decades in the bottle.

The perfect match for the sparkling wine is Bairrada-style suckling pig, roasted in a wood-fired oven, with crackling skin, one of Portugal’s best-known dishes.
And the region does not live on wine alone. There is the Buçaco National Forest, the first therapeutic forest in the Iberian Peninsula, with its palace hidden among centuries-old trees; the Luso and Curia spas to slow down; the Atlantic beaches minutes away; and Coimbra and Aveiro half an hour off.
Midway through the day, we leave the vines and enter the Buçaco National Forest, a walled woodland with centuries of history, planted by monks and later enriched with hundreds of species brought from around the world. You walk among sequoias, cedars and giant ferns, along shaded trails, fountains and chapels, in a cool microclimate that feels like another country.
We stop at the Buçaco Palace, Neo-Manueline in style and hidden among the trees, and just beside it at the Luso spa, with its pure, light water, for a pause to slow down. It is the perfect experience for nature lovers, and it lives inside our full-day route, Vines to the Sea.
